White Teas

White teas are known for their delicate flavour, which is why they should be brewed at a cooler temperature than other teas. White teas are best when steeped at 160-170°F (71-77°C). This lower temperature helps preserve the subtle flavour of these teas.


Green Teas

If you’re looking to make some green tea, it's best to brew it at a slightly higher temperature than white tea—around 170-185°F (77-85°C). The higher temperature helps bring out the natural sweetness and grassy flavours associated with green tea. However, if your green tea tastes overly bitter or astringent, try lowering the water temperature slightly and steeping for less time.


Oolong Teas

Oolong teas are unique because they are semi-oxidized; this means that half of the leaves have been oxidised while the other half has not. Oolongs require a slightly higher water temperature than green teas—185-205°F (85-96°C)—to help bring out both the sweet and floral notes as well as its slightly roasted taste.


Black Teas

Finally, black teas require boiling water—around 205-212°F (96-100°C)—in order to bring out their bold flavour profile. Black teas tend to have stronger tannins than other types of tea and therefore need hotter water in order to draw out those tannins which give them their robust taste.
